Rhum Barbancourt 5 Star (8 Year)
- Origin: Haiti
- Style: Rhum Agricole (distilled from fresh sugar cane juice rather than molasses).
- Tasting Notes: Since it’s made from cane juice, it has a distinct vegetal and grassy backbone. Expect notes of cooked pear, vanilla, and light pepper. It’s much drier and "cleaner" than the others on your counter.
2. El Pasador de Oro XO
- Origin: Guatemala
- Style: Spanish-style Ron (Solera aged and finished in cognac casks).
- Tasting Notes: This is likely the sweetest and smoothest of the bunch. It features heavy notes of honey, cinnamon, and toasted nuts. The cognac cask finish adds a sophisticated dried fruit (raisin/fig) elegance to the finish.
3. Kirk and Sweeney Reserva
- Origin: Dominican Republic
- Style: Traditional Spanish-style aged rum.
- Tasting Notes: Known for its "bakery" aroma. You’ll find a lot of caramel, vanilla, and butterscotch. It has a very velvety mouthfeel with a hint of oak and tobacco on the backend to balance out the initial sweetness.
4. Appleton Estate 15 Year (Black River Casks)
- Origin: Jamaica
- Style: Pot and Column still blend (English-style).
- Tasting Notes: Jamaican rums are famous for "funk" (ester-heavy fruitiness). At 15 years, that funk has mellowed into roasted almonds, orange peel, and dark cocoa. It’s sophisticated, woody, and has a wonderful spicy ginger finish.
5. El Dorado 21 Year
- Origin: Guyana (Demerara)
- Style: Demerara Rum (distilled in world-famous wooden stills).
- Tasting Notes: This is often considered a "holy grail" sipping rum. It is incredibly rich and dark. Expect intense brown sugar, espresso, leather, and tropical fruits (like grilled pineapple). It is exceptionally bold and long-lasting on the palate.
